All of my clients are drowning in tomatoes and I say, YES!

Tomatoes are high in antioxidant lycopene which has been linked to many health benefits including: reduced risk of heart disease and cancer. They are also a great source of vitamin C, potassium, folate and vitamin K.

Use those tomatoes up! I like to add them to soups, make fresh salsa, make caprese salad (or kabobs shown in picture) for gatherings and dry them in the dehydrator for soups and marinara in the winter.

Here’s my favorite salsa recipe:
6 fresh tomatoes
1 jalapeƱo (or more to taste)
1/2 onion
2 garlic cloves (I use more because I like it!)
2 tsp ground cumin
2 tbs fresh squeezed lime juice
about a cup of fresh cilantro
1 tbs honey (or more to taste)

Chop the garlic first pretty well and then add all ingredients to the food processor.
Sooooo good!
